Rind confit

Rolled pork rind tied in a bundle. Used in cooking such as bean soup, knuckle of pork, sausages with lentiles, salted pork, etc.. It is suggested to leave the rind at the bottom of the cooking dish; doing so you'll have the necessary fat and aromas.
